From 30–50-year-old, biodynamically farmed vines on gipskeuper (gypsum-rich keuper) in the Remstal, this is 100% Trollinger picked by hand and given a short cold soak before spontaneous fermentation on the skins. The wine then rests for at least a year on fine lees in large old wooden casks and is bottled unfiltered with low sulfur at just 10% ABV.
