From the north-facing granite slopes around the Bâtie des Vigues, this 100% Syrah is grown at 300 m elevation on soils of decomposed granite and quartz. Hand-harvested, fully destemmed and fermented with native yeasts in open-top vessels, it spends ~18 days maceration with daily pump overs and gentle punch-downs. Élevage is 12 months in used 225 L barrels followed by 3 months in tank before bottling unfined and unfiltered.
