Estate Sauvignon from high, breezy slopes around Terlano on porphyry and dolomitic limestone. Grapes are hand-harvested and whole-cluster pressed, with a spontaneous, cool fermentation split between stainless steel and large, neutral oak to balance cut and texture. The wine rests several months on fine lees with bâtonnage as needed; malolactic is largely blocked to preserve tension, and bottling is done with a light touch of sulfur, unfined and lightly filtered.
