- Terroir: From two parcels in Brochon and Gilly-les-Citeaux, located at the bottom of the slopes.
- Viticulture: Organic (Ecocert, 2019) and biodynamic methods, guyot pruning.
- Vinification: No added SO2 during vinification. Pressed with whole clusters, settled to remove the thick lees, ambient yeast fermentation and aging for 12 months in barrels (0-20% new). No fining, some filtration when necessary. SO2 added before bottling (50-55 ppm total).
Wine arrives late April, 2026.
