20-year-old vines Orientation -East-facing Soil Clay-limestone

Farmed without herbicides and pesticides; hand harvested with careful triage in the vineyards and again in the cellar.

60% whole cluster fermentation, 12 day cuvaison with 5-7 punch downs per day and sporadic pump overs. Following pressing, the wine settles two weeks in barrel before being transferred to barrels for ageing.

Aged 10 months in 1-5 year old barrels, followed by 3 months in tank before bottling without fining or filtration.

Notes
Exuberant, floral nose with aromas of cherries and black pepper. Fresh and delicate on the palate with great tension and dimension.
