Making of (2024): The vineyards are plowed by hand and have never seen chemicals. Yields are very low and the grapes are hand-harvested at their maximum ripeness, destemmed and gently pressed. The wine ferments for 15-20 days then ages in concrete tanks and barrels. Zero sulfur added; bottled in June 2025.
