The VaRIetY wines represent our entry-level range—dry
blends designed for everyday enjoyment. The specific
grape varieties take a back seat here; the focus is primarily
on uncomplicated fun in the glass—naturally, while
maintaining the unwavering standards we apply to both
our wines and ourselves.
Aging in stainless steel tanks gives these wines their
freshness and lightness.
With fresh fruit and floral top notes, VaRIetY white
reflects the cheerful character of our new entry-level
wine. Open and approachable, it shines on the palate
with delicate fruit and a crisp, dry edge. It combines
aromas of pome and stone fruit with white blossoms in
a light, carefree style. A joyful sip for carefree
moments. Uncomplicated, bone-dry, and unapologetically
11.5% ABV.
Vintage: 2023
Vinification: VaRIetY white is a blend of Sauvignac
and Calardis Blanc. We employed spontaneous
fermentation, six months of aging on the lees,
partial skin-contact fermentation, gentle
sulfuring, and bottling without filtration
(resulting in slight yeast cloudiness).
