• Vinification: Cold skin contact for 48 h, then slow press (5h). Half fermented in oak barrel, half fermented in tank
• Aging: 6 months, half in oak barrel, half in sandstone jar. This wine is slightly tinted by the Gamay
because of the cold skin contact before press.
