Vineyard: Central Coast Appellation

Making of (2025): One-third of the grapes are left whole-cluster and the rest are de-stemmed. Fermentation takes place in open-top bins with native yeasts only, with punch-downs twice a day. The wine is pressed to neutral oak barrels for 6 months of aging before bottling with a light filtration and minimal addition of sulfur.

Peresonality: “Slightly dusty Bing cherries and raspberries with a touch of rose petals. Pair with mozzarella sticks, pasta à la vodka, and margherita pies.”
