From a small plot in the commune of Castagnole Monferrato north of Doglia's home village of Anunziata. The grapes are harvested manually in the vineyard and carefully stored in little baskets and transport to the winery, crushed and fermented at a controlled temperature with a maceration of about 10-12 days.
