Dufour has also expanded his Champagne range in recent years, by making new wines from vineyards of his mother Françoise Martinot’s side of the family in a nearby village, which he also personally farms. This has lead to the separate label Françoise Martinot and the ‘Bistrøtage’ label: two lines of bubbles from the same winemaker, simply reflecting different vineyards and family. These wines are always single vintage, vinified with no added SO2 and no dosage.
As always the newest disgorgment certified Organic 100% Pinot Noir and always from a single vintage; this entirley taken from the vintage 2020. Sourced from the vineyard sites in Chervey from which the fruit for the Françoise Martinot / Bistrøtage line is always taken. Soils are calcareous clay in the Vallée de l’Arce (Côte des Bar). Indigenous yeast ferment of the vin clair, malolactic fermentation completes, followed by one year’s aging on lees in a split of 50% barrels and 50% tanks. Bottled with liqueur de tirage in November of 2022; disgorged June 2025. Extra brut; <2g/L dosage, no SO2 added.
