The top Meunier of the single-vineyard wines at Nowack, on planted on sand and a particular fossil-rich limestone called terres bleues. The vineyard is planted at 180m, the very top of the best slope Flavien owns in Vandières, which he labels as ‘Haut-côteau’
Pressed at Champagne Nowack by Flavien Nowack according to his press cycle using a vertical Coquard basket press. The juice is collected by Champagne Cose without sedimentation and without SO2 and brought back to the winery in Chouilly. The must goes directly into used 225 liter barrel sourced from Jaques Selosse, which are between 2nd and 5th use, from a mix of French coopers. Fermentation is natural, but a pied de cuve may be added to encourage the wine to finish completly dry. Malolactic happens naturally, but not to every barrel each year and SO2 is added to the barrels only if absolutly necessary. Elevage lasts until late July or Early August when the wines are bottled with a prise de mousse under cork. After 18-24 months sur latte, the bottles are disgorged.
