San Baltazar Guelavila is a small town in the district of Tlacolula with fertile, limestone-rich soil—ideal for agave growth. The harvested agave’s concentrated sugars result in a refined Espadín of great character and exceptional length, bolstered by Maestro Mezcalero Don Goyo’s carefully controlled natural fermentation—including the propagation of roses and lime trees alongside the tinas. Tragically, Don Goyo passed away in 2024, and these lingering releases represent the last of his work.
