This cuvée is Emmanuel Lassaigne’s chalk-driven rosé from Montgueux, built on old-vine Chardonnay for line and finesse with a small portion of Pinot Noir vinified as red for color and red-fruit lift. Fermentations are spontaneous, élevage rests partly in older barrels on fine lees, and the wine is bottled with minimal intervention and a very low dosage in an Extra Brut style. The profile is precise and dry—think raspberry, vine peach, and wild strawberry over a saline, limestone spine, with a finely creamy mousse and a clean, appetizing finish.
