This traditionally made sparkling wine blends Alsatian varieties—primarily Pinot Blanc and Auxerrois with a touch of Chardonnay (and a small share of Pinot Noir in some lots)—all hand-harvested and pressed gently for purity. The base wines ferment cool in stainless steel, then complete their second fermentation in bottle and rest on lees for roughly a year before disgorgement; dosage is kept in a classic Brut range to balance lift and snap.
