A Bottle We Love: Flos Castanea

 A fascinating skin contact wine with a new technique, from collaboration between Portugal’s most iconic biodynamic producers.
WHAT'S IN THE BOTTLE:

100% biodynamic Bical from Bairrada, a stormy, ocean-weathered region perched on Portugal’s limestone cliffs. This native white grape is destemmed and fermented in open-top lagar for two weeks on the skins along with chestnut blossoms: eschewing the use of sulfur, the flowers’ antioxidants act as a natural preservative. It’s then pressed and aged for a year in a mix of pipa and amphora.

Filipa Pato is one of Portugal’s literal handful of certified biodynamic producers, and the daughter of Bairrada's definitive vanguard Luis Pato. 'Flos Castanea' ("chestnut flower," in Latin) was made with a nod to her friend João Goucho, grandson of Portugal's original biodynamic icon (from Vinho Verde, Fernando Paiva) who’s known for experimenting with using botanical preservatives in lieu of sulfur.

WHY WE DIG IT:

It’s a fascinating innovation among a growing sea of natural wine. And, it’s equally delicious: a crossroads of Bairrada’s laser-sharp, saline minerality, with the texture and sophisticated aromatics of an extended maceration (and! chestnut blossoms).

Smoky, hazelnutty, a little tangy citrus, with touches of chamomile and wild thyme. Per Filipa: "This is definitely a big taste teaser!!!"

HOW WE'RE DRINKING IT:

While soaking in the cooling September sunsets 💆 Host a tinned fish night or try a nicely spiced piece of your favorite fish with some preserved lemon.
