Montbourgeau’s tiny-production Trousseau comes from a southeast-facing parcel planted in calcareous grey marne. Nicole’s son César handles the vinification and elevage of the red wines, and for the Trousseau he retains whole clusters for 50% of the harvest, lending the wine a lovely spice note. It undergoes a natural fermentation in steel for one week, then ages for one year, half in stainless steel and half in used 500-liter barrels.
