Biodynamic. 100% Trousseau derived from two vineyard sites: one called ‘Mouiller’ and ‘Les Chazaux,’ 50% of the wine coming from each. ‘Mouiller’ has two more types of limestone soils beyond the triassic and liassic which are most common in Jacob’s vineyards; here there’s oxfordien and meridian limestone. 100% whole cluster, macerated two weeks. Fermented in one 228L and one 500L. Aged 10-11 months; unfined, unfiltered, no SO2.
