Dave's Dolcetto is drawn from 60-year-old vines in the Bricco Capre vineyard of Alba. The site’s sandy marl over clay provides both aromatic lift and structural precision, keeping yields naturally low and production capped at just 2,000 bottles. Fermentation is carried out with native yeasts in open vats, with manual pigéage for gentle extraction, followed by 8 months of aging in neutral barriques over a decade old. The result is a Dolcetto of unexpected gravitas: dark cherry and plum layered with grilled herbs, lavender, liquorice, and graphite, all framed by an exceptionally fine tannin structure. It’s a wine that proves, in the right hands, Dolcetto can transcend its reputation for rusticity, standing as a serious and compelling alternative to both Barbera and Nebbiolo.
