Nicola Gatta's Newest Wine
The category-changing work of Nicola Gatta has landed back in the shop, including a new wine: Cuvée Nature, the new entry point to his remarkable sparkling wine range.
As always, these wines serve as a benchmark for what’s possible when extreme patience (and serious talent) in the cellar meet the limestone-rich soils of Lombardy. The results are firmly in the league of grower Champagne’s most impressive bottles. We get into this newest cuvée (and the full range!) below.

The newest wine (Cuvée Nature) is actually a refresh of another cuvée called ‘Ombra,’ which we have never seen in New York. It’s 80% Chardonnay and 20% Pinot Noir and, unlike many ‘entry’ wines, it's crafted exactly like his top site-specific cuvées. Meaning fermentation is spontaneous and in big barrel, followed by élevage in cement. All without sulfur, clarifiers or stabilizers – which is no small task for fine sparkling wine.
Once in bottle, the wine rests on the lees for 30 moons (approximately 2.5 years; Nicola documents his aging by lunar cycles). Disgorged without sulfur or dosage, this is a vinous, high-wire act that serves as a perfect introduction to his work. We're thrilled to have the wines back, albeit in tiny-but-mighty quantities.
80/20 organic Chardonnay/Pinot Noir aged 30 moons on the lees in cement tank. No dosage, no sulfur.
100% organic Chardonnay from Cru Cudula and Campiani West. Aged 50 moons, no dosage, no sulfur.
70/30 organic Chardonnay/Pinot Noir, base vintage of 2017 blended with a perpetuelle started in 2013. Aged 40 moons and bottled spring 2018, disgorged in March 2022. 3g/l dosage, no sulfur.
100% organic Pinot Noir, aged 60 moons, no dosage, no sulfur.
50/50 organic Chardonnay/Pinot Noir from Crus Campaini East and Campiani West, base vintage of 2009 blended with a perpetuelle started in 2008. Aged 180 moons and bottled spring 2010, disgorged March 2023. No dosage, no sulfur.
